Date Lime and Coconut Super Oat Balls

Ingredients

  • 1 cup Pitted Dates
  • 1/2 cup Vogel’s Café-Style Super Oats Chia & Coconut
  • 2 Limes, zested and juiced
  • 1/3 cup Desiccated Coconut (sweetened or unsweetened)

Note: If your dates are a little dry soak them in water for 10 minutes. Drain before adding to the food processor.

Preparation

  1. In large food processor with “s” blade, process dates until a sticky ball forms.
  2. Break apart ball slightly.
  3. Pour in Vogel’s Café-Style Super Oats Chia & Coconut, lime zest, and lime juice process until uniformly combined.
  4. Using small cookie scoop or tablespoon scoop out date mixture.
  5. Place desiccated coconut in small bowl.
  6. Roll each ball in coconut, to coat completely.
  7. Store in sealed container in refrigerator for up to one week.
